 Try this tutorial for starters
 Gives a basic intro to SC and linux audio and midi

or this one from CCRMA

Then the tutorial called Tutorial in the help files is pretty good.  
Not for linux per say but after translating the key commands from the  
tutorials written for mac into to emacs key commands. The rest is  
pretty much the same for mac -> linux

Open help files with key command 'ctl - alt - h' in emacs
