I've done some stuff based on processing (http://processing.org/) using oscP5 (http://www.sojamo.de/iv/index.php?n=11) last year... It's far from being finished, but if you want, I could send the first results to you off list...
There is also a way to get openGL-support via jogl...

would it be possible to pipe unix commands from SClang to some kind of opengl display program? Or is this simply the wrong approach, and we need to wait for more to develop on the graphics end?
