That's a good question!I imagine either they're building from source, or using a package management system (i.e. Debian) anyway? Could that be configured to put the quarks in the right place? Linux users as a species do tend to be a little bit more savvy about tech stuff, command lines, etc. Another option would be a script to install them.
Also there's a platform issue, as I imagine outside of the situations described, people may need to build UGen plugins for linux themselves. Imagine Linux on PPC for instance...
